It’s cold and after Christmas I felt like having something different to eat. So finally I decided to make Thai curry. I love it because it is made by cocounut, cocounut oil, milk and loads of green vegetables.

Why cocounut? Because there are people who will say it is saturated fat which is not good for your cholestrol . I am not getting into all this in this blog. Maybe some other time I would love to write about it. Cocounut is good for you. Coconut is highly nutritious and rich in fibers, vitamins, and minerals. It is classified as a “functional food” because it provides many health benefits beyond its nutritional content. It has got anti-inflamantory propeties too. Anyway, this blog is about my Thai curry.
The first step is to break the whole coconut and extract the flesh from it.

I put the cocounut, corriander, ginger, green chillies and lemon grass in my Vitamix and grind it to smooth paste.

The second step involved chopping all the vegetables.

The third step involved sauting all the vegetables in coconut oil and adding the ground paste and coconut milk to it.

Finally, I boiled it, making sure that that the vegetables are still crunchy. If you want, you can add some chicken pieces or prawns to give it that extra nutrients. Add a dash of lime juice to finish with.

And there you are! Your Thai curry is ready to eat. Eat it on its own or with some brown rice. Hope you like the receipe.
